8-12 oz bowtie pasta or ziti
1 1b fresh asparagus
2 chicken breasts cut into bite sized portions
2 cloves of garlic minced
½ tsp Tabasco (hot) sauce
¼ tsp red pepper flakes
¼ cup olive oil
3 Tbsp butter
½ tsp salt
¼ tsp pepper
¼ - ½ cup (or more) parmesan cheese
Pasta
Cook pasta according to package directions.
Sauce
Cut asparagus into 1 inch pieces, discarding the bottom
woody parts. Cut chicken into bite sized
pieces.
Heat olive oil and butter; add minced garlic, red pepper,
and hot sauce (Omit pepper and hot sauce if you don’t want it spicy – it does
give it a little fun flavor though).
Sauté for 2-3 minutes or until fragrant, but don’t let it burn. Add raw chicken and cook until mostly
done. Add asparagus, salt and
pepper. Cook until asparagus is
tender/crisp (about 5-6 minutes). Add this mixture to pasta and mix together
and serve with parmesan cheese on top of
each serving.

2 cups flour
2 cups quick oats
1 ½ cups brown sugar
1 tsp baking soda
½ tsp salt
1 ¼ cup butter
3 Tbsp flour
1 bottle caramel topping
½ bag of chocolate chips
1. Preheat oven to 350 degrees. Mix together first 5 ingredients. Melt all the butter and add to the
mixture. Grease 9x13 pan and press HALF
of the flour/oat/butter mixture into the bottom of the pan. Bake for 10 minutes.
2. Combine caramel topping and 3 Tbsp of flour. While the crust is still hot, drizzle the
caramel mixture onto the crust and then sprinkle with the chocolate chips (I
like to reserve a few for the top).
Crumble the remaining flour/oat/butter mixture over the top and press
lightly. Sprinkle with remaining
chocolate chips (if you want).
3. Bake again at 350 for 18-22 minutes. Cool.
I actually like these better the second day, when they are not as
gooey. I usually cut them into bars on
the first day and then they dry out a little more and are really yummy the next
day.
