Ingredients:
2 tablespoons olive oil, divided
1/2 medium red onion, diced
2 garlic cloves
4 cups (1 quart) chicken stock
2 cups orzo
2 pints cherry tomatoes, halved
1/2 teaspoon pepper
1/4 cup chopped fresh dill
1 teaspoon grated lemon zest
1/2 cup kalamata olives, sliced
1 lb cooked shrimp
8 oz feta cheese, crumbled
Preparation:
Preheat oven to 400 degrees. Heat medium-size
pot over low heat. Add 1 tablespoon oil, onion and garlic. Saute until just
softened. Add chicken stock, increase heat to medium-high and bring to a boil.
Stir in orzo and bring back to a boil. Reduce heat to low and simmer, stirring
occasionally, until liquid is absorbed and orzo is tender. Toss tomatoes with
remaining 1 tablespoon oil and black pepper. Place on roasting pan; roast 10
minutes in oven until lightly charred. Add tomatoes, dill, lemon zest, olives,
shrimp and feta to cooked orzo. Stir gently until mixed in.
This was a new recipe for my family to try. I love exposing them to new dishes and this was deftinely something they hadn't had before. I was nervous about the feta being in it but all the ingredients combined made it super! My family enjoyed it. Thanks Holly!
